Adonis brings nearly two decades of experience in Singapore’s cocktail scene to ANTI:DOTE. Known for his approachable style and natural flair for hospitality, he leads the bar programme with a focus on craftsmanship, creativity and genuine guest connection.
A former aspiring stand-up comedian, Adonis views bartending as more than mixing drinks. It is a performance built on conversation, personality and memorable interactions. Through thoughtfully crafted cocktails and engaging storytelling, he creates experiences that are as welcoming as they are refined.
Drawing on experience across Europe, the Middle East and Asia, Nicola Fenu brings a global perspective to ANTI:DOTE’s bar programme. Throughout his career, he has led beverage operations, developed innovative cocktail concepts and built a reputation for creating engaging guest experiences rooted in creativity and hospitality.
Passionate about creating moments of enjoyment, connection and discovery, Nicola brings together thoughtfully crafted cocktails, warm service and a welcoming atmosphere to shape memorable experiences at ANTI:DOTE.
Born and raised in Taiping, Malaysia, Ong Szeling, known as Chef Ling, discovered her passion for cooking during a hospitality course in Penang, inspiring her to pursue a culinary career. Today, she serves as Junior Sous Chef at ANTI:DOTE and is the first female chef to helm an outlet at Fairmont Singapore.
An award-winning chef with over 15 years of experience, Chef Ling brings creativity, discipline and quiet determination to ANTI:DOTE’s evolving culinary vision.
