In an exclusive collaboration with the revered Editions de Parfums Frédéric Malle, SKAI presents Scents & Sensibilities, an exquisite high tea experience that seamlessly blends the art of perfumery with the delicate craft of fine dining. Available from 1st to 31st October, between 3pm and 5pm daily, this offering is a sensory masterpiece centred around the timeless beauty of roses.

This unique partnership sees SKAI drawing inspiration from the vision of Frédéric Malle, who approaches perfumery as an art form, translating it into a multi-sensory culinary experience. The collaboration breathes new life into the concept of high tea, elevating it beyond the ordinary. As you indulge, the essence of Frédéric Malle’s evocative fragrances infuses each dish, creating a delicate yet powerful symphony that engages both palate and senses.

Crafted with care by Executive Chef Seumas Smith and Executive Pastry Chef Yong Ming Choong, the menu mirrors the complexity and beauty of Frédéric Malle’s perfumes. In the savoury selections, the influence of fragrance artistry continues. The Smoked Eel Rillette with Kaluga Caviar delivers an indulgent bite, where the smoky richness of eel is enhanced by the citrusy lift of bergamot, evoking the layered depth of a fine perfume. The Foie Gras Mousse & Cherry Tart, another standout, contrasts the buttery smoothness of foie gras with the sharp sweetness of cherries—a nod to the way a perfume unfolds in layers.

A highlight among the sweet offerings, the Raspberry Rose Inspiration Chocolate Tart celebrates the elegance of rose, balancing its delicate floral notes with the vibrant sweetness of raspberries, all encased in a luxurious layer of rich chocolate. Another sublime creation, the Madagascar Jasmine Vanilla Rose Intensity Choux, beautifully captures the interplay between fragrant jasmine, creamy vanilla, and the warm, lingering scent of rose.

The collaboration extends to the beverages, with choices designed to complement the aromatic dishes. Sip on the floral-infused Scarlet Eden mocktail, a refreshing blend of lychee, raspberry, and rose, or indulge in the Daydream of Lilac cocktail, a fragrant concoction of Botanist Gin, lavender syrup, and Giffard Violette, designed to transport your senses with every sip. These beverages have been carefully curated to echo the floral inspiration and elevate the overall sensory experience.

The high tea experience is available at SGD 68++ per adult, inclusive of a choice of non-alcoholic beverages such as a mocktail, coffee, or tea, and SGD 34++ per child (aged 6 to 12 years).
